Yummy recipe!

Ok, tonight for dinner I made some super good soup! I got the recipe from my sister-in-law and it was so yummy that I thought I would share it so you can try it as well!

Spanish Style Chicken Noodle Soup

1 T extra virgin olive oil
3 celery ribs, chopped
2 med carrots, chopped
1 lrg onion, chopped
1-2 T (a palmful) chili powder
1 bay leaf (fresh if possible)
Salt & pepper
1 1/2 quarts (6 cups) chicken stock
1/2 pound orzo pasta
1 pound chicken, cut into bite-size pieces
2 28oz cans stewed tomatoes
1 cup corn, fresh or frozen
1 15oz can black beans, drained

For garnish:
Sliced scallions (I used green onions, I couldn't find scallions)
red or blue tortilla chips (used plain tortilla chips!)
lime wedges

Heat oil in a large pot on med-high heat. Add celery, carrots, onions, chili powder, and bay leaf. Season with salt and pepper. Cook 2-3 minutes and add chicken stock. Bring to a boil and then add pasta. Cook according to package directions, adding chicken during last 5 minutes of cooking. Add tomatoes, corn, and beans and heat through. Ladle into bowls and garnish with scallions, chips and lime wedges for zip. Serves 6 with seconds.

WARNING: This makes A TON of soup! They are six hearty portions! I doubled the recipe (I know, I can't cook for anything less than a small army!! But we are never starved!) and fed my family, the missionaries, my neighbors, and my parents, and STILL have enough left over for another lunch! (Thanks for the heads up about how much this makes, Valerie!!) Since it was tasty, we don't mind eating it again. This will become a regular around our house!
